I could come up with something clever to say that would make you all think ‘ha, that Wandering Matilda, she so witty’. It would be something along the lines of Julia Child blah blah, reevaluating life decisions to become a Sunday baker blah blah, napping being the ultimate answer to life’s problems blah blah…
…But haven’t got time for that today, my cakes getting cold.
Yoghurt & Strawberry Cake
Makes one loaf
Adapted from Donna Hay
Ingredients
100g melted butter
2 eggs
1 cup sugar
1/2 cup natural yoghurt
1 1/2 cups of self-raising flour
10 strawberries, chopped into little bits
Method
Pre heat your oven to 160 and line a loaf tin with baking paper.
Whisk the butter, eggs, sugar and yoghurt in a bowl then stir through the flour and strawberries until you have a smooth batter.
Transfer into the tin and smooth out evenly then pop in the oven for an hour or until a skewer comes out clean. Easy peasy!
Kitchen notes...
Any fruit will work, just cut it up finely and go right ahead!
