
I’d HIGHLY recommend making my Argentinian Roast Chicken for this recipe!
I also serve my Chimmi with raw zoodles as a pesto or drizzled over roast chicken/lamb/beef or veggies. Insanely delicious indeed. You can also add a handful of walnuts, almonds or cashews if you want to add an element of crunch.
Insanely Delicious Chimmichurri Sauce
Makes 2 cups

Ingredients
Handful of Coriander, Basil, Flat leaf parsley, Mint
3tbs white wine vinegar
Juice from 1 lime
1tbs caster sugar
Large pinch of salt
3/4 cup olive oil
Method
Blend all the ingredients together in a food processor or blender until smooth then taste. You may want to add a touch more salt, sugar or wine white vinegar if you want it a little more punchy.
Transfer to an airtight container and pop it in the fridge. It’ll last a week or two.

Lemons should also do the trick if limes are super expensive.
