Right now, I’m all (only?) about recipes that involve minimal washing up, little difficulty, zero thought, full flavour, 80% success rate with toddlers and ingredients that I’ll likely have scattered between my freezer, fridge and panty.
Well colour me happy, there’s a sofa in here for two! Oven roasted meatballs + slow cooker baby! Tick tick tick.
Slow Cooker Meatballs
Makes LOTS of meatballs
Ingredients
Meatballs…
- 500g beef mince
- 500g pork mince
- 2 eggs
- 1 onion, diced
- 3 cloves of garlic, crushed
- 1 carrot, grated – optional
- 1/2 cup panko or bread crumb
- Handful of chopped parsley
- Handful of grated parmesan
- Salt & pepper
Sauce…
- 1x 400g can of chopped tomatoes
- 1x 700g jar of passata
- Pinch of sugar
- Salt & pepper
Method
Turn your oven on to 220 and line two baking trays with baking paper. Mush all the meatballs ingredients then roll into little balls before placing evenly on your baking trays. If your oven has reached temp, bake for 15-20 minutes or until the tops start to become golden and brown.
While they’re in the oven, get your slow cooker out and stir the sauce ingredients together. Fill the empty can of tomatoes up with water and add that to the mix also. Once the meatballs are cooking yum, place them gently into the sauce, stir around then cook on low for 6-7 hours if you have the time but high for 4-5 will work also if not 😉
