The more adult I become, the greater satisfaction I feel for meal planning. Oh the tragedy in that sentence. Maybe it’s not about how adult I become but rather how boring I become. Maybe I should take up tennis? In any case, for when the meal planning fail inevitably kicks in (generally a day after meal planning): pesto. Stock standard bases and fully interchangeable greenery for the win. Who needs tennis anyway?
Quik & Easy Rocket & Walnut Pesto
Makes a big tub
Ingredients
- 2 cloves of garlic
- 2 large handfuls of fresh rocket
- 1 large handful of fresh basil
- Handful of grated parmesan
- Handful of walnuts – see note
- 1 cup olive oil
- Salt & pepper
Method
Using a food processor or blender, pulse the ingredients together until you have an almost smooth but still textural pesto. Scrape down the sides and drizzle with a little extra olive oil if you want it smoother then pulse again until you’re happy.
Cook your pasta then before you drain, leave a little cooking water in the pot, just a few tbs. Add your pesto to that pot and stir your pasta through. Heat it for a minute or two to slightly cook out that raw garlic taste that the pesto will have.
You can also use this recipe as a dip, spread or chunky sauce to top over steak or grilled chicken.

Cashews, almonds or pine nuts will also work well.
