Spicy Italian Sausage Fettuccine

A day in the life:
5:10pm meltdown because sock missing
5:11pm crisis adverted because sock found
5:12pm only wants pink spoon
5:13pm forgets she’s toilet trained
5:14pm remembers second child
5:16pm “Hey Google, play the Underbelly theme song It’s A Jungle Out There” “Hey Google, turn up the volume”
5:17pm pours a gin
6:30pm Praises the existence of 15 minute dinners

I never claim to be a perfect human but I do claim to have created a major winner right here.

Spicy Italian Sausage Fettuccine

Serves 3-4

Ingredients

  • Olive oil
  • 1 red onion, diced
  • 3 cloves of garlic, crushed
  • 1 large red chilli, diced
  • 400g jar Arrabbiata sauce
  • 1tsp caster sugar
  • 4 good quality Italian pork sausages
  • Very large handful of fettuccine
  • Parmesan to serve
  • Salt & pepper

Method

Start by getting a large non stick pan or skillet on a medium heat then add your diced red onion. While that’s caramelising, grab your sausages and using your hands, squish out the meat from the lining straight into the pan. You want little meatball bits. Once you’ve done all the sausages, add the garlic and chilli to the pan then stir around until everything golden and glistening.

Pour the jar of Arrabbiata sauce into the pan then fill up that same jar with water and add that also. Bring to a simmer, stir through the sugar and some salt and pepper then leave to gently bubble away while you cook your fettuccine.

Once your pasta is cooked, drain off then add to the sauce. Using tongs, stir through the saucy goodness. Serve with parmesan and extra cracked pepper. Major Deliziosa!
