Hearty & Homely Chicken Soup

Obviously when Perth’s skies become anything other than clear and blue and the temperature is under 30 and perfect, it’s breaking news. Literally, breaking news. What can I say, we’re cute and we like to get on board with the idea of cozy. Clearly I am no exception. Chicken soup for the mind, heart and soul coming right up…

Hearty & Homely Chicken Soup

Serves a hungry 4

Ingredients

  • Olive oil
  • 1 large onion
  • 3 cloves of garlic
  • Knob of fresh ginger
  • 2 carrots
  • 3 celery stalks
  • 1 leek
  • Handful of fresh thyme or oregano
  • 2 chicken breasts
  • 1L chicken stock
  • 1tbs soy sauce – trust me
  • Salt & pepper

Method

Get your biggest pot on a medium/low heat and drizzle super generously with olive oil. While that’s warming up, start chopping up your onion, garlic, ginger, carrots, celery and leek. You want them in little bite size pieces then add them all to the pot. Sprinkle with a bit of salt, add your herbs then leave over the low heat to sauté for 15 minutes or so.

While that’s on, slice each chicken breast length ways leaving you with four portions then once the veg is looking nice and caramelised, add the chicken breasts, stock and soy sauce. Season with pepper, bring to a gentle simmer then leave on the super low heat for 10-15 minutes.

Once the chicken is cooked, turn off the heat and remove the breasts and stalks of herbs and pop into a bowl. Ditch the stalks. Using two forks, shred the meat then return to the pot. Have a taste to see if you want a touch more salt. YUM.

Kitchen notes...

Feel free to add extra veg – chopped kale, corn kernels, frozen peas, baby spinach etc.
