Toddler Banana, Oat & Coconut Bakes

Banana & Coconut Bakes BABE FOOD

In moments of ‘oh God, what are we going to do for the next hour?’ I revert to these. Benefits include:

  • one bowl
  • one tablespoon
  • one teaspoon
  • one fork
  • one muffin tray
  • 15 minutes
  • old bananas
  • no egg (for no other reason than it means they can eat the whole raw mixture if they want to)
  • no sugar
  • hugely adaptable if you have a few ingredients missing

but the best of all…

  • she can’t get enough

Toddler Banana, Oat & Coconut Bakes

Makes 8-10

Banana & Coconut Bakes BABE FOOD

Ingredients

  • 2 large ripe bananas
  • 3tbs wholemeal flour – see note below
  • 3tbs quick oats – the shredded ones
  • 3tbs desiccated coconut
  • 3tbs olive oil
  • 1tsp baking powder
  • 1tsp vanilla extract
  • 1tsp LSA mix – optional
  • Blueberries to top – optional

Method

Start by turning your oven on to 180 and grab your muffin tray.

In a bowl, mash the bananas until fully smooth with a fork then combine all the remaining ingredients.

Grease your muffin tray with oil or butter then spoon the mixture evenly across the moulds. Top with halved blueberries if using and bake for 15 minutes or until a skewer comes out clean.

Leave to cool in the moulds before removing. Transfer to a sealed container and leave in the fridge! Hope for a toddler success!

Can also be frozen.

Kitchen notes...

I have made these loads of times now with different variations and all work just as well.
If you don’t want to use flour you can just use 6tbs of oats instead. Likewise, if you don’t have oats, 6tbs of flour can be used. I have also tried adding a tbs or two of yoghurt and this works it’s just a more dense outcome.
