When you have ordered lunch and dinner twice over the weekend (yes, that equates to Saturday lunch, Saturday dinner, Sunday lunch and Sunday dinner for those doing the maths) you know you have only one option on a Monday night and that is to cook. Major eye roll when Survivor is on and you’d much rather just watch that and look at how far away the guy is with your dumplings is on your phone. Or is that just me?
2 minutes, one food processor and 99% chance you have everything in your pantry as it is. As Tina Fey’s Dad would say to not to would be “inexcusable”.
Go-To Peanut Butter Satay Sauce
Makes 1 1/2 cups
Ingredients
- Big knob of ginger
- 2 cloves of garlic
- 4tbs peanut butter
- 5tbs soy sauce
- 3tbs sriracha
- 2tbs rice wine vinegar
- 1tbs honey
- Juice from 1 lime
Method
Using a food processor or blender puree all the ingredients until super smooth. That’s it!
Perfect addition to stir fried veggies, as a dipping sauce with carrot sticks or throughout noodles with chicken or beef. I transfer this into a take away container and freeze it for future me to enjoy but it’ll last ages in the fridge, no worries.
