OK, so this recipe wins two Wandering Matilda awards:
1) The award for the worst photo
2) The award for the best flavoured taco for absolutely minimal effort
If you can bypass number one and go straight to number two, you’ll have no regrets.
Mexican Salsa Verde for Carne Asada Tacos
Serves 2-3
Ingredients
- 1 large green chilli
- Bunch of coriander – roots & leaves
- 1 brown onion
- Generous drizzle of olive oil
- Juice from 1 lime
- Handful of cherry tomatoes
- 3tbs sliced jalapeños
- 1tsp caster sugar
- 1tsb salt
Steak of your choice, tacos and shredded cabbage to serve.
Method
Using a food processor blend up all the salsa ingredients until totally smooth then transfer to a pot. Cook over a low heat for 20-25 minutes then have a taste. It may need a touch more sugar, salt or lime juice. Leave the salsa to come to room temperature before serving up.
While that’s cooking, season your steaks generously with salt, pepper and olive oil then grill them up how you like them cooked over a super high heat to get a nice char then leave aside to rest before slicing thinly for your tacos. Shred up your cabbage and heat up your tacos then tuck in 🙂
