Sure, I may have discovered Hanukkah through Seth Cohen on The O.C. but no matter, I got there in the end. Reason being: I discovered Hanukkah food. Think of Latke like a potato rosti. Serve them beside a poached egg and invite Adam Sandler to join the party because I assure you, these are that good. As was the O.C.

Garlic, Spring Onion & Jalapeño Latkes (or potato rostis)
Makes 8
Ingredients
- 3 large or 5 small potatoes, peeled
- 2 spring onions, sliced thinly
- 2 cloves of garlic, crushed
- 1tsp smoked paprika
- 2 eggs
- 2tbs chopped jalapeños
- 1tbs flour
- Salt & pepper
- Poached egg, tomato sauce or a dollop of sour cream to serve optional but highly recommend
Method
Grate up the peeled potatoes then one handful at a time, squeeze out as much liquid as you can from them then transfer the lot into a big bowl. Add the spring onion, garlic, paprika, eggs, jalapeños, flour and salt and pepper and stir together until you have a good lookin’ batter.
Heat up a big non stick pan and drizzle with oil. Once the pan is hot reduce the heat to low. Grab a tablespoon and grab a big scoop then using your hands form into a ball them place into the hot pan. Flatten down slightly to make little patties then continue. Remember that the potato is raw so you don’t want them getting too golden too soon so keep that heat low. After 5 minutes or so, gently turn them over then cook for a further 5 on the other side then a couple more minutes round the edges.
