Coconut & Cinnamon Rice Pudding
Makes 20 tbs
Ingredients
- 1 cup of rice flakes
- 1 can of coconut cream
- 1 cinnamon quills or 1tsp cinnamon
- 1/2tsp vanilla extract
Method
Combine all the ingredients in a little pot and bring to a gentle simmer then add 1/2 cup of water. Continue cooking, stirring every now and then until the rice is mushy and the coconut cream/water has reduced to a thick consistency (about 10-15 minutes) Feel free to add a little more water to help it along when feeding. I portioned into moulds and froze.
