Cheesy Cherry Tomato & Spinach Savoury Loaf

Single handedly, the thing I missed most after living away for five years was not the ocean, the fresh air, the gumtrees but instead the following:

  • Glad wrap. Dutch readers: what you classify as cling film is a near imitation
  • Pump water bottles. They are just the best.
  • Tim Tams. Obviously.
  • Savoury muffins.

Now back in Australia all I do in complain how expensive everything is and dream of my days abroad. Hence I take matters into my own hands.

Cheesy Cherry Tomato & Spinach Savoury Loaf

Cheesy Cherry Tomato & Spinach Savoury Loaf

Ingredients

  • 2 1/2 cups plain flour
  • 2tsp baking powder
  • 1/2tsp baking soda
  • Big pinch of salt
  • 1 egg
  • 1 1/2 cups milk
  • 3tbs butter
  • 2 handfuls of spinach, chopped
  • 1 handful cherry tomatoes, quartered
  • Handful grated cheese
  • 1tsp dried herbs – I used thyme

Method

Start by turning your oven to 180 then line and grease a baking tin.

In a big bowl combine the flour, baking powder, soda and salt then make a well in the middle. Crack your egg in the centre then pour in the milk and combine to a thick dough. Put your tbs of butter into a mug and microwave until soft then stir through the dough.

Add the quartered cherry tomatoes, finely chopped spinach and grated cheese then once combined transfer to your lined baking tin and even out on top. Sprinkle with a little more grated cheese then bake in your preheated oven for 40-60 minutes or until a skewer comes out clean. Everyones oven will differ so check after 30 mins or so and make the call how its coming along.

Kitchen notes...

Add anything else you like to this – sundried tomatoes, olives, feta, left over roasted veg in your fridge, jalapeños, fresh herbs from your garden etc will be lovely.
