This is a great one for babes who are transitioning from only sweet flavours to savoury as the corn is so sweet and potato so mild. For these cooks, go with the water rather than stock for a slow introduction. On that note, if you’re finding it hard to get your babe interested in nothing other than bloody pear, transition into pumpkin then gradually add your meats to those sweeter veggies (tiny bit of chicken breast with sweet potato or little bit of lamb with cauliflower for example).
This is anther baby food idea where the fundamentals can be transitioned into something you and family can have for dinner. In this case, pot pie baby! All I did was thicken the stew after you’ve taken the babes portion out, season a bit then cover with pastry in an oven proof dish and bake until golden and crispy.
Country Chicken, Potato & Corn Stew/Pot Pie
Makes LOTS
Ingredients
- Knob of butter
- 500g chopped chicken thigh
- 2 garlic cloves, chopped
- Pinch of dried tarragon, oregano or thyme – optional
- 1 leek, chopped
- 5 potatoes, peeled and chopped
- 1 can of corn, drained & rinsed
- 500ml chicken stock or water
- Handful of fresh parsley
Big babe/adult friendly:
- Plain flour
- Puff pastry
Method
In a big skillet or cast iron pot melt your butter with a swig of olive oil then add your chicken. Over a high heat brown on all sides until caramelised then add the garlic, dried herbs if using and the leek. Add a touch more butter to the pot if needed then turn down the heat. Cook the veg out for 5 minutes or so then add the potato, can of corn and stock or water (two can fulls). Stir randomly until the potatoes are super soft then stir through the parsley.
I pureed mine to a smooth paste so added a touch more water at the end to get the consistency I wanted. If you’re wanting a bit of texture just pulse lightly with your handheld blender.
Mum & Dad friendly: take out whatever amount you want for yourself. Add a pinch of salt and pepper and stir through a bit of plain flour to make it more like a gravy and looks like a great pie filling to me!! See above for the details.
