If you feel like the ground spices and herbs are too early for your babe, just leave out. Same goes for the onion and garlic. This is the beauty of babe food! I added the spices to introduce various flavours and also because I plan on eating this for lunch as a burrito bowl then dinner as chilli con carne 😉
If you don’t have some of the veg, all good don’t worry. Other veg that can be added is celery or chopped up spinach. Turkey or chicken mince can be substituted. Black beans can be left out and/or substituted for red kidney beans.
Five Veg Mexican Beef
Makes lots & lots
From 8 months
Ingredients
- 2 small onions, diced
- 4 cloves of garlic, crushed
- 2 small carrots, diced
- 1 green capsicum, diced
- 1 tomato or 5 cherry tomatoes
- 500g good quality beef mince
- 1/2tsp cumin, ground coriander, paprika – see above
- Can of crushed tomatoes
- Can of corn
- Can of black beans
- Bit of cheese – optional
- 2 cups brown rice – optional
Method
Heat some olive oil in a large skillet or pan and add your onion, garlic, carrot and capsicum. Turn down the heat and cook through for 10 minutes. Add the tomatoes, beef mince and spices if using and turn up the heat. Breaking up the mince as you go, cook through until fully browned.
Turn down the heat then add the can of tomatoes then fill up the can with water and pour in. Add the corn and black beans, reduce the heat and cook for a further 20.
While that’s on, cook your rice.
Little babes: add the cooked rice then blend until fully smooth or just a few pulses to keep textural
Babes: serve with rice then enjoy with a spoon
little humans: serve with buns instead as sloppy joes or in a wrap as a burrito
Freeze in moulds once cool.
