Here is my first instalment of BABE FOOD!
I’ve received loads of requests and questions about what I feed Matilda so here it is for you now in writing. I seem to go between baby cookbooks, websites and blogs but am yet to feel inspired for one main reason. The food isn’t adult friendly. I’m done making her breakfast, lunch and dinner followed by an entirely different plate of yum for me. Way way too much time wasted. So here goes… a bundle of recipes for you that involve not only ingredients that you yourself can eat with your babe but the preparation and cooking of the dishes are adult friendly and ultimately, I’ve once again based the recipes around cuisines in the hope for a non-fussy babe. Each recipe I aim to include as many food groups as possible.
Chicken, Roast Pumpkin, Ricotta & Quinoa
Makes a weeks worth.
From 7 months
Ingredients
- 1 chicken breast
- Half a butternut pumpkin
- Sprinkle of dried oregano
- 2tbs ricotta
- 1/2 cup quinoa – optional
- Knob of butter
Method
Start by turning tour oven to 200 and chopping your pumpkin into little squares and putting on an oven tray. Drizzle with olive oil and dried oregano then bake until soft – around 15 minutes.
Cut you chicken breast into thirds then grill until cooked over a medium heat. While that’s cooking, cook your quinoa as per the packet instructions then leave aside.
Little babes: pulse the chicken, pumpkin, ricotta and butter until smooth then stir through the cooked quinoa keeping it textural.
Freeze in moulds once cool.
