Spinach & Artichoke Mac & Cheese

Is is bad that I’m entirely following my husband to the US later in the year just so I can eat at every dive bar in Texas? He’ll be working hard and I’ll be working hard on making good decisions when a ‘server’ comes to take my order with the biggest smile holding iced tea in her hand and i’ll say six little words: warm spinach and artichoke dip please.

Spinach & Artichoke Mac & Cheese

Serves 4-6 as a side

Spinach & Artichoke Mac & Cheese

Ingredients

  • t1tbs butter
  • 1tbs plain flour
  • 1 cup milk
  • 2-3 handfuls chopped baby spinach
  • 170g jar of artichokes
  • Handful grated colby cheese
  • Small handful of parmesan – optional
  • Salt & pepper
  • 250g pasta of your choice

Instructions

Turn on your oven to 180!

Start by grabbing a stick blender, food processor or Nutribullet and pureeing the artichokes then leave aside. Get your pasta on the boil.

Grab a little non stick pot and pop in your butter. Once melted, add the flour and stir around over a super low heat for a few minutes. Pour in your milk and stir around until it starts to thicken then add your spinach. Once the spinach wilts add the pureed artichoke and grated cheese (leaving some aside for the topping). Season with salt and pepper then turn off the heat until your pasta is cooked.

Drain and rinse your pasta then stir through your artichoke cheese sauce. Transfer to an oven proof dish, sprinkle over the cheese your left aside, pop in the oven and bake until gooey!
