The Easiest & Best Blondies

  • Do we think it’s a bad time to buy a puppy when I’m due to have a beb in 4 weeks? Preg rain is running wild and I think I need an Irish Setter in my life. It’s either this, a Baby Bjorn or copious amounts of overpriced baby headbands…. or all of the above.
  • Almond milk is a horrific idea in coffee.
  • All the ham needs to surround me morning, noon and night this Christmas.
  • I don’t like being around people that say no to treats. Be an enabler, be fun and embrace white chocolate. The end.

The Easiest & Best Blondies

The Easiest & Best Blondies

Ingredients

115g butter
1 cup white chocolate buttons
1 cup caster sugar
1 egg
1tsp vanilla extract
1 cup plain flour

Method

Heat your oven to 180 and grease and line and square brownie tin.

Pop your butter and white chocolate in a microwave save bowl and microwave until melted (the white chocolate may need a little stir to help it on its way). Once smooth, add the sugar, egg and vanilla and work through until you have a nice batter then combine the flour.

Pour into your baking tin and bake for 15-20 minutes. Each oven will differ so test with a skewer at 15 mins. You want it to be a bit fudgy so it’s OK if the stick comes out a tiny bit sticky.

Kitchen notes...

Feel free to add anything else here like cranberries, macadamias or frozen berries. Depending on the size of your tray you may find this comes out as more of a thiner slice. If you’re after something with height, double the recipe and leave it to cook a little longer.
