While y’all are out there being adults, I’m sitting here working on my mix tape of the day. Todays feature includes: bakin delicious things inspired by Bill Granger’s Hawaii restaurant, googling through the latest on Tay Tay, querying how much is too much yoghurt, deciding that Lorde and I probably wouldn’t be friends in real life, playing Despacito on repeat and wondering when it’s acceptable to watch the Game of Thrones finale again. I vote in an hour. Cos you know, the whole ‘no TV before lunch rule’ #freelancelife
Bill’s Coconut Bread
Makes one loaf
Adapted from Bill Granger's Oahu kitchen
Ingredients
2 1/2 cups of plain flour
2 cups shredded coconut
1 cup caster sugar
2tsp baking powder
1 1/4 cups milk
1tsp vanilla extract
2 eggs
10tbs melted butter
Method
Turn your oven on to 170 and line a loaf tin with baking paper.
In a bowl, combine the flour, coconut, sugar and baking powder then leave aside. In another bowl, mix the milk, vanilla and eggs together before pouring over the dry mix. Once slightly combined, add the melted butter (if you add the butter to the milk mix it’ll harden into bits). Stir thoroughly then transfer to your loaf tin and bake for an hour or until a skewer comes out clean.
Serve toasted with marmalade and a pot of tea!
Kitchen notes...
Keep this one wrapped in cling film in the fridge once it’s cooled. This will make it easier to slice and toast.
