I used to think salad was for boring people who cared more about their flat stomach rather than their enjoyment over eating dinner and that my friends is a concept I do not understand. Then I started eating actually good salads and there’s no going back. I’ve changed. Well only a little, this isn’t a regular occurrence but sometimes we all just need a bowl of fresh textural healthy to make us feel like actually, we’re doing alright.
Thai Grilled Beef Noodle Salad With Sesame Lime Dressing
Serves 3-4
Ingredients
Dressing:
3tbs fish sauce
2tbs soy sauce
2tbs sesame oil
1tsp honey
Juice from 1 lime
Salad:
200g vermicelli noodles
450g steak
Mint & coriander, chopped
1 carrot, sliced finely
Half a cucumber, sliced
1 red chilli, chopped
Handful of peanuts, chopped
Method
Heat a grill or non-stick pan over a high heat. Rub your beef generously with salt, pepper and drizzle each side with olive oil then place on your pan. Cook for a minute or two on each side (longer if you prefer med-well) then leave aside to rest.
While that’s resting, chop up all the veg, herbs and nuts and pop in a big bowl. Cook your vermicelli as per the packet instructions then while still warm, transfer to the bowl with the veg.
In a mug, mix together all the dressing ingredients then pour over the noodle bowl. Now your beef should be well rested so slice thinly and serve with the salad. Doneso.
