Easy Sundried Tomato Pesto with Rigatoni

I could lie and tell you all that my day was filled with productivity, but the forever growing pile of dry cleaning is a sure thing to exposing my questionable choices. That being pondering over the inaccuracies of Friends. Like how Ross lives in the smallest apartment and yet is the only one with a job. Except Chandler, but he doesn’t really count. When I wasn’t playing with pesto and eating all the rigatoni, I spent a little too much time also wondering how I could win back my well earned bragging rights for Monopoly Deal. The answer? TBC.

Easy Sundried Tomato Pesto with Rigatoni

Serves 4

Ingredients

4 tomatoes
2 cloves of garlic
Small handful of parmesan
1/2 cup of sundried tomatoes
1/4 cup of the oil from the sundried tomatoes
Handful of almonds
Salt & pepper
500g rigatoni
Buffalo mozzarella to serve

Method

Using a food processor or blender, puree the pesto ingredients (including a pinch of salt & pepper) until smooth.

Cook your pasta as per the packet instructions then rinse and drain. While your pasta’s on, heat the pesto in a pot then stir though the cooked pasta. Serve with the mozzarella and cracked pepper.
