Homemade Pici in Pesto Sauce

Hello Nonna, It’s me Holly. I know, I know, you think I’m crazy, but I really was meant to be born into your family of dream hair and gnocchi making hands. I basically only eat all this pasta in the hope that one day you’ll cuddle me with affection for all the years we have to catch up on. In the meantime, I’ll just be sitting here, waiting for my ‘Best Non-Italian Italian’ prize for this is truly, madly, deeply delicious.

Homemade Pici in Pesto Sauce

Serves 3-4

Ingredients

Large handful of basil leaves
Handful of grated parmesan
2 cloves of garlic
Handful of walnuts
1/4 cup of olive oil
Salt & pepper
500g semolina flour – see note

Method

Using a blender or food processor, puree the basil, parmesan, garlic, walnuts, olive oil and a splash of water until smooth. Season with a little salt and pepper and once you’re happy with it, leave aside.

Follow my steps on this post to make your own pici – it’s WAY easier than you think. Give it a go! If you’re not that keen, pop your pasta on and cook as per the packet instructions then once drained and rinsed, heat through with as much pesto as you like.

Serve with extra parmesan and cracked pepper!

Kitchen notes...

If you can’t be bothered making your own pici just buy 500g of any pasta. The pesto is still a delicious feat in the kitchen.
