In my opinion, the key to travelling is to have little to no expectations. The places I’ve have the best time have all come from this mentality. Budapest, Vancouver, Dusseldorf and last but not least, Sri Lanka. My only request for this country was to eat fish and drink a coconut. Done and done. Anything else was merely an exciting treat.
I highly recommend Sri Lanka but specifically, Unawatuna to Galle Fort and Dikwella to Talalla Beach (we were told by multiple people to skip Colombo). It’s like an Indian version of Thailand before tourists discovered it. It’s like the Sri Lankan version of Maui in the 70s. It’s full of long boards, coconut trees, beautiful people, wide open spaces and food to die for and if you follow my itinerary, you get to say Dikwella and Unawatuna multiple times a day which is just really fun.
So here’s my fav restaurants/bars in Sri Lanka:

Fortazela, Galle Fort
