
The days when I don’t do so well at being an adult, I feel a little beaten. Examples include missing flights, losing keys and spilling dinner on my dresses (which happens far too regularly). Days when I smash being an adult, I know I am winning at life. Examples include paying street performers, packing an umbrella, buying flowers and waking up at 7am on a Saturday morning and making breakfast with extra adult points for sprinkling chia seed on whatever that is. So here it is. A winning Saturday morning decision that warrants a pat on the back for doing really well at life.
banana & peanut butter porridge
Serves 2

Ingredients
1 1/4 cup oats
1 banana, sliced
1tbs unsweetened smooth peanut butter
1 1/4 cup milk of your choice
2tbs chopped cashews – walnuts & almonds will also work
1tbs honey plus extra to serve
1tsp cinnamon
Sprinkle of chia seed to serve – optional
Method
Add all the ingredients together in a small pot. Bring to a gentle simmer over a low heat.
Mush through the banana and peanut butter until smooth and the oats are cooked – around 5 minutes should do. If you prefer a runnier porridge add a little extra milk. Serve with extra honey, banana, cashews and sprinkle over some chia for extra points.
