My week in Japan taught me six things:

3. Fried chicken katsu curry is always a good idea
4. Four meals a day is acceptable
5. Eating katsu four times a day makes you put on weight
6. When home, must eat healthy
Easy Chicken & Veg Stir Fry
Serves 2-4
Ingredients
Oil
1 brown onion, sliced
3 cloves of garlic, sliced
1tsp sliced ginger
3-6 red bullet chillies, chopped
1 chicken breast, sliced
Handful of sliced green beans
1 carrot, cut on the diagonal
Small handful of baby corn, halved
1 small green zucchini, cut on the diagonal
1 red capsicum, chopped
Handful of chopped broccoli
Handful of thai basil
Sauce:
2tbs soy sauce
2tbs fish sauce
2tbs oyster sauce
1tbs mirin – if you don’t have this, use any kind of vinegar (except balsamic)
1tbs honey
Method
Heat a few tablespoons of oil in a wok or large pan and over a high heat fry the onion, garlic, ginger and chillies. Once charred and wilted, add the chicken & veg. Stir fry for a few minutes then pour over the sauce. Keep the heat at the highest possible and stir around until the chicken and veg are cooked.
