Given I just accidentally turned the husbands brand new white shirts a bad milky blue colour, it’s time for kitchen sorrow recipes. While I know he is more irritated about the fact that he has to venture out to a crowded shopping centre for now the second time this year, two ingredients are a sure thing to imply ‘shit, my bad’. And that my friends is pork and soy sauce.
This suuuuuper easy recipe is also insanely delicious. I used soba noodles, making it a little less guilty. As for veg, go whatever you have in the fridge. Chicken can also be substituted if you’re not that into pork.
Sticky Pork Soba Noodle Bowls
Serves 2
Ingredients
1/4 cup light soy sauce
1/4 cup mirin
1 1/2tbs apple cider vinegar
2tbs honey
4 cloves of garlic, crushed
2tbs finely chopped ginger
2tsp sesame seeds
1tsp cayenne pepper
1tsp salt
1 egg
500g pork mince
Handful of soba noodles
Veg options: shiitake mushrooms, asparagus and edamame
Method
Preheat your oven to 180 and get a medium, deep oven roof dish ready.
In a cup, mix together the soy sauce, mirin, apple cider vinegar and honey then leave aside. In separate bowl, add the garlic, ginger, sesame seeds, cayenne pepper, salt, egg and pork mince.
Using your hands, mush the mixture together then roll into little golf balls. Place in your oven proof dish then drizzle with olive oil.
Place in the oven for 10 minutes then remove and turn up the heat to 200. Pour over the prepared soy sauce and cook for a further 15. Shake around then cook for a further 5 minutes.
In the meantime, cook the soba noodles as per the packet instructions and heat a fry pan. Drizzle slightly with olive oil and add the mushrooms. After 5 minutes, add the asparagus and edamame and heat through for 2 minutes.
Stir the veg and noodles through the meatballs and sauce and nom away.
