American

life changing granola

After talking with a girlfriend about her recent washing machine disaster, we both agreed that being an adult was too hard that day and to just, not adult. It’s simple! No decision making is required. You just close the door on the flooded laundry and broken down washing machine you just bought online and that you just carried up two flights of stairs and… not adult.

Obviously there are problems with our theory, like having to deal with the whole, piece of shit washing machine flooding your laundry, but we decided, together, that it was a future problem.

Unfortunately, it’s now the future and its time to adult again. And on adult days, we moan our way through problem solving and wish someone else could deal with it. Lucky for us though, making your own granola equals a sure way to feel like you’re doing well and being a great adult and winning at life.

Life Changing Granola
Makes a lot!

Ingredients
3 cups oats
1 cup millet puff
1 cup buckwheat puff
1/2 cup flaxseed
1/2 cup sunflower seeds
1/2 pumpkin seeds
1/4 cup chia seed
1/4 cup LSA mix – ground linseed, sunflower & almond mix, optional
1 cup chopped walnuts
1/2 cup chopped hazelnuts
1/2 cup chopped almonds
1/2tsp salt
1/4 cup olive oil – coconut oil will also work well
1/2 cup honey – maple syrup or rice malt syrup for vegans
1tsp vanilla extract
1/2 cup cranberries – optional
1/2 raisins – optional
1 cup desiccated coconut – optional

Method
Pre heat your oven to 160 and line two large baking trays.

In a large bowl, mix together all the dry ingredients – except the cranberries, raisins and coconut. In a separate bowl, add the olive oil, honey and vanilla extract then microwave for 20 seconds. Combine the mixture well then pour over the oat bowl.

Continuously stir the mixture until each little oat is glossy and sticky then transfer evenly onto the baking trays, patting down evenly. Bake in the preheated oven for 20 minutes.

Stir the mixture around, then bake for a further 10 minutes. Sprinkle over the coconut, cranberries and raisins (if using) and place back in the oven for 3 minutes.

Leave the granola out of the oven to come to room temperature – around 20 minutes, then transfer to an airtight container. This will last up to 3 weeks. Lemme here ya… “nom nom nom”.

Hey there

This is a collection of tastes from my tables abroad… wherever that may be. I spend my days professionally food writing my nights recipe developing flavours from my adventures.

I am at my happiest when sharing food with my favourite people. I care deeply about nourishing our bodies with goodness. I don’t believe in dieting, I don’t believe in fads, I believe in feeding your body simply with home made deliciousness.

Things we know about ordering takeaway Chinese foo Things we know about ordering takeaway Chinese food:

1) You will inevitably receive an oversupply of wooden chopsticks. Obviously this is because you over-ordered and you only have yourself to blame for the restaurants assumption.

2) The food will be mildly OK. Just good enough for you to finish you container but not good enough to alleviate the feeling of takeaways remorse.

3) No lessons will be learnt and you will repeat this two weeks later. I call this Regrettable Chinese Takeaway.

So all in all, it’s probably just easier to grab some steak and a broccoli and sort this one yourself (or until next week when you Regrettable Chinese Takeaway all over again).
