This months vegetable addiction = zucchini. Combining that with my favourite cheese, this is a sure thing for Game of Thrones and dinner on the couch. And before I hear you thinking “I am cutting carbs” remember that a) thats a terrible idea and b) cheese is protein guys, a protein!

Penne with Zucchini, Basil & Ricotta
Serves 2-3
Ingredients
3tbs olive oil
1 large green zucchini, chopped into 1cm slices then halved
4 garlic cloves
Juice from 1 lemon
1/4 cup grated parmesan
3tbs ricotta
Handful of basil leaves, roughly chopped
250g penne pasta
Salt & pepper
Method
Blanch the zucchini in a pot of boiling water for a few minutes then take out using a slotted spoon. Cook the penne in the same boiling water then drain and rinse.
While the pasta is cooking, heat the olive oil in a pan and cook the garlic for 5 minutes then add the blanched zucchini. Keep over a low heat, stirring regularly then add the cooked pasta, lemon juice, parmesan, basil and season to taste.
Serve into bowls then spoon over dollops of ricotta and extra cracked pepper.
