Raspberry Friands

I’m all about the guilty pleasures. Top 40 music, buying pre cut fruit, anything Kardashian, white bread, cat videos, anything from the IKEA sweet shop, late night cheeseburgers and obviously cafe treats that I definitely don’t need. Screw croissants and cookies, its all about the friands peeps. Dense little clouds of goodness that you should get around.

Raspberry Friands
Makes 6-8

Ingredients
50g plain flour
80g almond meal
160g icing sugar
90g melted butter
3 egg whites
1tsp vanilla extract
Handful of raspberries – frozen or fresh

Method
Pre heat oven to 160 and grease a friand tray. If you don’t have this a muffin tray will work just fine.

In a large bowl stir through the dry ingredients before pouring in the melted butter, egg white and vanilla extract. Stir until fully combined. You want a slightly thick cake like batter.

Pour the mixture into the friand moulds leaving 2cm at the top. Plop a few raspberries in each mould then bake for 25 minutes or until a skewer comes out clean and they are nice and golden on the top. Leave to cool on a wire tray before tucking in. These will last up to 3 days in an airtight container or freeze well.
