chocolate rum mousse

It just became too depressing trying to find a healthy dessert to take to a dinner party over the weekend, so I caved. I went to the gym and chose my choice. This is OK with me because I literally go to the gym so I can eat. While this really doesn’t help my ongoing endeavour to lose weight for my wedding I have accepted that we can’t all have everything. We can however add rum and coffee to chocolate and pretty much make the perfect dessert.

Chocolate Rum Mousse
Adapted from What Katie Ate
Makes 8 little pots

Ingredients
3tbs instant coffee
170g dark chocolate buttons
170g salted butter
4 eggs
150g caster sugar
4tbs dark rum
Pinch of salt
Thickened cream and cacao to serve

Method
Mix the coffee with 2tbs hot water and stir through until you have a thick paste. Bring a pot of water to a simmer and add the chocolate, butter and coffee to a heatproof bowl and place over the pot. Make sure the water doesn’t touch the bowl. Stir through until melted and combined.

In a separate heat proof bowl add the egg yolks, sugar and rum and place over the simmering water. Whisk continuously until you have a pale yellow, thick mixture – around 3-4 minutes. Place the egg yolk bowl in a larger bowl filled with cold water and continue to whisk a further 3-4 minutes. You want the mixture to become thick and at room temperature before combining with the chocolate sauce.

Using a stand mixer or electric whisk beat the egg whites until stiff then gently fold through the chocolate.

Pour into little pots and keep in the fridge until set – around 2-3 hours. Top with cream and cacao just before serving.
