Preparing for a renovation is worrisome and exciting but perhaps not in the ordinary way.

It’s a learning curve. At least I can always rely on my trusty cooking ability to win over our tradespeople in exchange for silence in my inability to renovate to the fiancé.
Lamb Kofta
Serves 2-3
Ingredients
Vegetable oil for frying
1 brown onion, finely chopped
8 cloves of garlic – 4 finely chopped, 4 kept whole with the skin on
2tbs ground cumin
1tbs paprika
1tbs dried thyme
1tbs sumac
1tbs chilli powder
1tsp cinnamon
400g lamb mince
1 cup natural yoghurt
1/2 cup chopped dill
1/4 cup chopped mint
1/4 cup chopped coriander
Juice from half a lemon
Pita breads, red onion, cucumber and extra chilli powder to serve
Method
Pre heat your oven to 180 and line a baking tray. Place the unpeeled garlic on the tray and bake for 10 minutes.
Heat the oil in a non stick fry pan and sauté the onion and chopped garlic for 5 minutes on a low heat. Add in the spices and fry for a further 2-3 minutes. Do this gently to ensure you don’t burn the spices.
Put the onion mix into a large bowl to cool slightly before adding salt and pepper and your lamb mince. Using your hands squish the mixture together until fully combined then roll into little oval shapes golf balls. Using the same pan, brown the koftas on all sides over a high heat before baking for 15 minutes.
To make the dressing, crush the roasted garlic into a paste and mix with the yoghurt, half the herbs, lemon juice and salt and pepper.
Break apart the cooked koftas and serve on the pitas with the remaining herbs, cucumber, red onion and the yoghurt dressing.
