cappuccino cake

I feel like Sundays are sacred. When someone invites me to something on a Sunday loud and long groans shortly follow. Hangover or not my Sundays include a few Skypes, not leaving the house, an episode of 30 Rock and baking of some description. Having an odd craving for coffee cake the other day I came up with this baby. A perfect Sunday afternoon cake with a tea, coffee or stout (yes… the dark beers go very well with this and yes I did that).

Cappuccino Cake

Ingredients
250g softened butter
250g brown sugar
300g self raising flour
4 eggs
4tbs chopped hazelnuts
1tsp vanilla essence
200ml black coffee

Frosting
3tbs Mascarpone
1tsp light brown sugar
Cacao powder to decorate

Method
Pre heat your oven to 170 and line a cake tin.

Mix together the butter and brown sugar until smooth then add the flour and eggs one at time until you have a thick cake batter. Pour in the coffee, hazelnuts and vanilla essence and mix well.

Pour the mixture into your cake tin and bake for 45-50 minutes or until a skewer comes out clean.

For your frosting, simply mix together and spoon onto your cake once at room temperature. Sift a little cacao powder ontop to decorate.
