Basic Almond & Basil Pesto

So there is a thing I like to call the shit I eat when my fiancé is away and I can’t be bothered cooking. Initially I thought these meals should be hidden secrets until I realised, I am probably not the only one. One thing I will keep a secret is the shit I eat after dinner but here you have my first edition. Plain old pesto pasta.

The crunch from the almonds and the roasted flavour from the garlic make this is a perfect hump day go-to. It takes about 15 minutes start to finish and should cost you about $6 from the shops. Dinner alone just got a whole lot better.

Basic Almond & Basil Pesto

Serves 3-4

Ingredients

2 cloves of garlic
Handful of fresh basil
Handful of almonds
Handful of grated parmesan
1/2 cup of olive oil
Salt & pepper

Method

In a food processor, mortar & pestle, spice grinder or blender, puree all the ingredients together until chunky but smooth.

If you find the pesto is too thick add a little more olive oil.
