thai chicken larb

After a weekend bender in Singapore I guess I shouldn’t be surprised that my scales went up multiple strokes. It’s hardly possible to say no to roti canai and 100 plus’, right? That was breakfast. It was downhill from there. Eek. But I mean, Nasi Lemak, Mee Goreng, Chicken Rice, Laksa, Chicken Wings, Satay and million beers are just TOO GOOD!

The problem is… I have no desire to diet and no energy to exercise upon my return. THUS… I bring you larb! The heaven sent dish that allows you to eat a deliciously super low calorie dinner! I may have eaten multiple M&M peanuts post dinner but you of course can remain in the low cal phase.

Thai Chicken Larb
Serves 3-4

Ingredients
Cooking oil
600g chicken mince (pork is also an option)
2 red onions, sliced
5 cloves of garlic, sliced
1 tbs ginger, finely chopped
1 large lemongrass stalk, finely chopped
6 kaffir lime leaves, super finely sliced
Large handful of thai basil
Large handful of mint
7 field mushrooms sliced
5 red birds eye chillies, chopped (optional)
Juice of 2 limes
3 tbs fish sauce
2 tbs palm sugar
Romain lettuce to serve

Method
Start by prepping all yours ingredients.

Heat the oil in a large wok and over a high heat add the onion, garlic, ginger, mushrooms and lemongrass. Add in the chicken mince breaking up as you go shortly followed by the herbs, chilli fish sauce, palm sugar and lime juice. Have a taste here as you may want to add more fish sauce or palm sugar to ensure the sweet, salty and sour flavour is spot on.

And there you have it! Serve in lettuce cups and eat away. If lettuce doesn’t suffice (insert boyfriends name) steamed rice will too work just fine!

Things we know about ordering takeaway Chinese foo Things we know about ordering takeaway Chinese food: 

1) You will inevitably receive an oversupply of wooden chopsticks. Obviously this is because you over-ordered and you only have yourself to blame for the restaurants assumption. 

2) The food will be mildly OK. Just good enough for you to finish you container but not good enough to alleviate the feeling of takeaways remorse.

3) No lessons will be learnt and you will repeat this two weeks later. I call this Regrettable Chinese Takeaway.

So all in all, it’s probably just easier to grab some steak and a broccoli and sort this one yourself (or until next week when you Regrettable Chinese Takeaway all over again).
